French toast has been one of my favorite types of breakfast ever since I was a little girl. And yes, we DO eat French toast in Slovenia (it just has a different name). When I got the chance to try out something from the Vegetarian Quick & Easy - Under 15 Minutes cookbook I immediately decided for this recipe, because I adore vanilla in everything!
If you want to make it, here's what you'll need to do:

Ingredients for 4:
4 slices of white bread
2 eggs
half a cup almond milk
1 teaspoon vanilla extract
4 tablespoons vegetable oil

Beat the eggs with the milk and vanilla. Heat the oil in a frying pan. When the oil is hot, dip each slice of bread into the egg mixture, then place it into the hot oil. Fry the bread for a few minutes on each side until golden brown. Place the toast on paper towels and serve while still warm.
